- 180 g all-purpose flour
- 85 g almond flour
- 15 g baking powder
- 3 g baking soda
- 3 g salt
- 3 g ground cinnamon
- 300 g whole milk (3.7% fat)
- 100 g eggs
- 90 g molasses
- 5 g vanilla extract
- 100 g unsalted butter, melted
- 200 g black raisins
- 100 g walnuts, chopped
Instructions
Step 1: Prepare the Dry Ingredients
In a large bowl, combine the all-purpose flour, almond flour, baking powder, baking soda, salt, and ground cinnamon. Mix well until everything is evenly blended.
Step 2: Mix the Wet Ingredients
In a separate bowl, whisk together the milk, eggs, molasses, and vanilla extract until the mixture becomes slightly fluffy. Gradually add the melted butter and continue mixing until fully incorporated.
Step 3: Combine the Mixtures
Pour the wet ingredients into the bowl with the dry ingredients. Whisk everything together until you achieve a smooth and uniform batter.
Step 4: Add Raisins and Walnuts
Gently fold in the raisins and chopped walnuts using a spatula, ensuring they are evenly distributed throughout the batter.
Step 5: Bake the Cake
Grease a non-stick loaf pan (32x10x10 cm) with butter and pour in the cake batter.
