Raisin and Walnut Cake Recipe (Moist & Easy Homemade Dessert)

Ingredients

  • 180 g all-purpose flour
  • 85 g almond flour
  • 15 g baking powder
  • 3 g baking soda
  • 3 g salt
  • 3 g ground cinnamon
  • 300 g whole milk (3.7% fat)
  • 100 g eggs
  • 90 g molasses
  • 5 g vanilla extract
  • 100 g unsalted butter, melted
  • 200 g black raisins
  • 100 g walnuts, chopped

Instructions

Step 1: Prepare the Dry Ingredients

In a large bowl, combine the all-purpose flour, almond flour, baking powder, baking soda, salt, and ground cinnamon. Mix well until everything is evenly blended.

Step 2: Mix the Wet Ingredients

In a separate bowl, whisk together the milk, eggs, molasses, and vanilla extract until the mixture becomes slightly fluffy. Gradually add the melted butter and continue mixing until fully incorporated.

Step 3: Combine the Mixtures

Pour the wet ingredients into the bowl with the dry ingredients. Whisk everything together until you achieve a smooth and uniform batter.

Step 4: Add Raisins and Walnuts

Gently fold in the raisins and chopped walnuts using a spatula, ensuring they are evenly distributed throughout the batter.

Step 5: Bake the Cake

Grease a non-stick loaf pan (32x10x10 cm) with butter and pour in the cake batter.
Bake in a preheated oven at 180°C (fan oven) for about 45 minutes, or until a toothpick inserted into the center comes out clean.

Step 6: Cool and Serve

Allow the cake to cool at room temperature before removing it from the pan. Slice and serve.
